Yeah no, thats not what happen. Chi Chi was pretty much belong to that stereotype more than Lunch (because for Lunch, she got another different personality, so she is not completely in that stereotype zone), but Chi Chi are still around.
And tbh, Toriyama himself have stated that the reason she didn't show up anymore was because he forgot about her. Once forgotten, it would be way harder to make her show up in main story again. Thats the reason we haven't seen her again.
